Qui vengono appesi a lunghe catene e, grazie al particolare microclima di Volpaia caratterizzato da inverni freddi e asciutti, appassiscono fino a Febbraio, quando raggiungono la concentrazione desiderata che garantir\u00e0 al Vinsanto un elevato grado alcolico ed un buon tenore di zuccheri residui. Le uve appassite vengono quindi pigiate e il mosto ottenuto, dopo una chiarifica naturale, viene travasato nei tradizionali caratelli di rovere insieme alla madre, cio\u00e8 alla feccia del Vinsanto che \u00e8 stato appena tolto da quei caratelli. La madre permette l\u2019avvio di una fermentazione molto lenta, che pu\u00f2 durare 5 anni, durante i quali si sviluppano i caratteri tipici del Vinsanto del Chianti Classico.
