Distilled within the first days after a light pressing for the wine production, the fresh dregs, still rich in wine, are distilled in a vaporized copper vessel using the discontinued method. After every distillation the Master Distiller, Priscilla Occhipinti, removes the head and tail by hand and selects the heart.
